  • 3 cups chickpeas cooked & peeled
  • 1/2 lb beet root
  • 2 large garlic cloves
  • 1/4 cup tahini plus 2 tbs extra
  • 1 1/4 tsp sea salt
  • 1 tsp cumin
  • 3/4 cup aquafaba * cold
  • 4 tbsp lemon juice
  • parsley to garnish
  • black & white sesame seeds to garnish
  • extra virgin olive oil to garnish
  1. Cook beet root anyway you want to

Bake - 390 degrees for about 1 hour or until you can easily pierce the root

  2. Let cool to the touch and then peel the root

  3. Combine all your ingredients in your food processor or high speed blender

  4. Process until smooth

  5. If your mixture is still too thick, slowly add more aquafaba until you get a consistency that you like

Recipe Notes

*aquafaba is a fancy name for chickpea cooking water. In this recipe, it works best if it has been cooled and chilled in the fridge.
