Ingredients

  • 4 1/2 cups black beans rinsed (can use canned)
  • 2 ears corn shucked (can use 1 can drained)
  • 1 bell pepper orange, yellow or red
  • 1 cup cherry tomatoes or diced tomatoes
  • 1 cup red onion small
  • 1 cup white onion small
  • 1/2 cup cilantro
  • 1 medium jalapeño or 2 tbs finely chopped pickled jalapeño
  • 2 tbs lemon juice
  • 1/4 cup olive oil
  • 1/4 cup rice wine vinegar
  • 1 tbs paprika
  • 1 tsp cumin
  • sea salt to taste

Instructions

  1. Combine all ingredients and toss to combine.  Adjust taste as needed by adding more of the listed spices.

  2. Cover and chill to enhance the flavors
