It’s that time of the year again where we all crave homemade pecan pie.  So many people are wanting a gluten free option that tastes good, and we have the perfect recipe for you.

Real easy to do and the taste is amazing.  There are 2 ways you can make this, one being with a gluten free crust OR like I made them without a crust and inside muffin cups.

The muffin cups is a great way to make sure no one eats the whole pie and that there is plenty to go around.  This recipe made 12 cupcakes or 1 traditional pie.

Here is a delicious and easy to make gluten free pecan pie.  You can make mini pies as well.

Ingredients
  • 250 grams raw pecans
  • 1 cup pure maple syrup
  • 3/4 cup date paste
  • 3 large eggs
  • 1/4 cup ghee melted
  • 1 tsp pure vanilla extract
  • 1/2 tsp himalayan salt
  • 1/4 tsp coconut oil
Instructions
  1. Preheat oven to 350 degrees F

  2. in a small skillet put in the 1/4 tsp coconut oil and the pecans.  Roast for a few minutes to bring out the flavor and aroma of the pecans.  Stir frequently so as not to burn them.

  3. Take out 36 pecan half and put aside.  Take the rest of the pecans and put in a food processor and grind up but not so much to where you create pecan butter.  VERY SMALL pieces and put aside

  4. add date paste and maple syrup to a mixing bowl and stir delicately with a large whisk until well combined.  Put in the eggs, melted ghee, vanilla extract and salt and resume whisking until well blended.  Put aside

  5. take the chopped pecans and put into each muffin cup equally, I counted by tablespoons to make sure they were all equally filled

    I used silicone muffin cup liners

  6. take the liquid ingredients that were combined and pour evenly over the pecans making sure that each cup contains equal amounts.  Again use a tablespoon to distribute them equally

  7. place in the middle of the oven and bake for 25-30 minutes or until the filling is set but still soft to the touch and the tops are lightly browned.

  8. They will puff up, that is OK as they will deflate when they are cooled

  9. Remove from oven and completely cool, serve warm or at room temperature

  10. You can take them out of the liners if you want and decorate with homemade whipped cream or a scoop of ice cream.
