Mashed Cauliflower will be your next go to side meal.  Who doesn’t love mashed potato?  Who doesn’t love cauliflower?  How would you like to try a new twist on mashed potato by using cauliflower?  The recipe below is a great way to get your family to eat more cauliflower.  They will never know unless they walk into the kitchen while you are preparing this dish.

Replace your mashed potato with cauliflower and you have yourself a new side dish that your family and friends will love.

Ingredients
  • 1 small onion diced
  • 1 large cauliflower chopped
  • 2 cloves garlic
  • 6 cups vegetable broth low sodium
Instructions
  1. using a small amount of your favorite cooking oil, lightly coat the bottom of a medium pot

  2. add the onion and saute for 2 minutes, reduce heat to low, cover the pot and let the onions cook for 5-7 minutes but do not brown them

  3. add the cauliflower and garlic and just enough broth to cover the cauliflower and cook, covered for 30 minutes or until the cauliflower is very tender

  4. use a slotted spoon and take out the veggies and put aside to let them cool

    SAVE THE BROTH FOR ANOTHER RECIPE

  5. once cool, put the veggies in a food processor and pulse until they look like they are pureed

  6. return this to the pot and heat to the desired temperature
