A great way to start the day with these mini spinach souffles. A healthier alternative when adding dried moringa to the dish.

Mini Spinach Souffles

Calories: 336 kcal
  • 2 cups cooked spinach
  • 1 1/2 cups mushrooms diced
  • 1 clove garlic minced
  • 1/4 cup Parmesan Cheese grated
  • 1 tsp oregano dried
  • 10 egg whites FRESH
  • 1/2 cup low sodium marinara sauce
  • 1/4 cup moringa
  1. Preheat oven to 350F and coat muffin tin with olive oil spray

  2. combine spinach, mushrooms, garlic, parmesan, oregano and moringa - mix well with a spoon

  3. place eggs in a high speed blender and blend on high until stiff peaks form

  4. pour eggs over the veggies and gently fold to combine

  5. spoon mixture evenly into muffin tins

  6. bake for 20 minutes or until tooth pick inserted comes out clean

  7. allow to cool slightly and remove from tin. Top each shuffle with a spoonful of marinara sauce and a pinch of parmesan cheese. Serve Warm
