Quinoa Chili Fries

Ingredients
  • 1 cup dried quinoa, cooked
  • 3 tbs olive oil OR other cooking oil
  • 2 tsp chili powder
  • 1 1/2 tsp cumin
  • 1 tsp smoked paprika
  • pinch red pepper flakes
  • black pepper to taste
  • 4-5 cloves garlic, chopped
  • 1 bunch green onions, chopped, save top to garnish 8 or so
  • 1 pepper seeded and chopped
  • 1 red or orange pepper seeded and chopped
  • 1 1/2 cups cooked red OR kidney beans
  • 1 tbs tamari or barges amino acid or low sodium soy sauce
  • 2 15 oz cans no salt diced tomatoes
  • 1 16 oz can no salt tomato paste
  • 2 tbs red cooking wine
  • 1/2 tsp salt
Instructions
  1. Cook Quinoa as directed

  2. in large pot with lid, combine oil, cili powder, cumin, paprika, red pepper flakes and black pepper low heat 3 minutes

  3. add garlic and onion, medium low heat saute 5 minutes 

  4. add peppers increase to medium heat and saute for 5 minutes

  5. stir in quinoa and saute for 4 minutes

  6. stir in rest of ingredients, cover loosely and lower heat to simmer

Fries
  1. heat oven to 465 and cook 2 small or 1 large potato per serving, but into fries
  2. combine 1 tbs oil and sprinkling of chili powder, paprika, onion and garlic in bowl

  3. toss fries to coat and single layer on cookie sheet put in oven for 15 minutes

  4. flip fries and cook an additional 10 minutes

  5. combine fries and quinoa chili and enjoy
