Vegan mayo is the healthier choice to make when wanting to change your diet. Made with chick pea water aka aquafaba, this is healthy and nutritious. Even when you buy this at a health food store, it is highly possible that there are chemical preservatives in there. You do not need those chemicals inside your body. Here’s an easy to do it yourself recipe to make your own.
- 3 tbs chick pea water
- 14 chick peas whole cooked
- 1 tsp apple cider vinegar
- 1 tbs fresh lemon juice
- 1/4 tsp coconut nectar or other sweetener
- 1 clove garlic
- 1/4 tsp ground mustard
- pinch sea salt
- 1 cup olive oil or grape seed oil
combine chick pea water, chick peas, apple cider vinegar, lemon juice, sweetener, garlic, mustard and salt
with your blender running, slowly add the oil allowing the consistency to gradually become thicker
store in a glass airtight container in the refrigerator and use within a week
